This recipe features tender, pan-seared chicken bites glazed in a citrusy sauce, stacked high over creamy avocado slices and white rice. It is as much a feast for the eyes as it is for the palate.
Ingredients
- Chicken: 1 lb boneless skinless chicken.
- Sweetener: 3 tbsp honey.
- Citrus: Juice and zest of 2 limes.
- Base: Cooked white rice.
- Healthy Fats: Fresh avocado, sliced or cubed.
- Garnish: Freshly chopped cilantro or parsley.
Instructions
- Prepare the Chicken: Cut the boneless skinless chicken into small, uniform bite-sized pieces. Season them with salt, pepper, and any preferred spices like garlic powder or paprika.
- Sear the Protein: Heat a large skillet over medium-high heat with a splash of oil. Add the chicken bites and cook until they are golden brown and fully cooked through.
- Glaze: Whisk together the 3 tbsp of honey along with the juice and zest of 2 limes. Pour the mixture over the cooked chicken in the skillet. Toss for 1–2 minutes until the sauce reduces into a sticky, glossy glaze that coats every piece.
- The Rice Base: Prepare your favorite white rice according to package instructions. For extra flavor, you can stir in a bit of lime zest and chopped cilantro once cooked.
- Build the Stack:
- Place a round mold (or a large measuring cup) on a plate.
- Fill the bottom third with a packed layer of cooked rice.
- Add a layer of freshly sliced or cubed avocado.
- Top with a generous portion of the honey lime chicken bites.
- Garnish: Carefully remove the mold. Top the stack with extra cubed avocado and a sprinkle of fresh cilantro or parsley.
