1. Prep the Marinade
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. This mixture serves as both the seasoning for the potatoes and the marinade for the chicken.
2. Toss the Potatoes
Preheat your oven to 200°C (400°F). Place the potato wedges in a large baking dish or a parchment-lined sheet pan. Pour half of the marinade over the potatoes and toss until they are evenly coated. Spread them out to ensure they roast rather than steam.
3. Season the Chicken
Nestle the chicken pieces among the potatoes. Pour the remaining marinade over the chicken, using a brush to ensure every inch is covered.
4. Roast to Perfection
Place the dish in the oven and roast for 35–45 minutes.
- Pro Tip: For extra crispy potatoes, toss them halfway through the cooking time. The chicken is done when the internal temperature reaches 74°C (165°F).
