📝 Step-by-Step Instructions
- Prep the Ribs:
- Preheat your oven to 300°F (150°C).
- Flip the rib racks bone-side up and remove the membrane (silverskin) by sliding a butter knife underneath and gripping it with a paper towel to pull it off. 🔪
- Season Generously:
- In a bowl, mix all the spice rub ingredients together.
- Coat both sides of the ribs liberally with the rub, massaging it into the meat. 🧂
- Wrap & Slow Bake:
- Wrap each rack tightly in heavy-duty aluminum foil to trap the moisture.
- Place foil-wrapped racks on a baking sheet bone-side down.
- Bake for 2 hours to 2 hours and 30 minutes until the meat pulls back from the bone ends and becomes tender. ⏲️
- Sauce & Caramelize:
- Carefully unwrap the foil and transfer ribs to a hot grill (medium-high heat) or an oven broiler set to HIGH.
- Brush generously with your choice of sauce (Kansas City or Carolina style). (If doing Memphis style, leave plain and dust with extra dry rub!)
- Grill or broil for 3 to 5 minutes per side until the sauce bubbles and caramelizes into a sticky, glossy crust! 🔥
