Honey Garlic Glazed Salmon Bites

Instructions

1. Prepare the Sides

Begin by boiling your potatoes until tender, then mash with butter and milk until smooth. While the potatoes boil, toss the asparagus in olive oil, salt, and pepper, and roast at 400°F (200°C) for 10–12 minutes.

2. Sear the Salmon

Pat the salmon cubes dry with a paper towel and toss them in a bowl with your dry seasonings (paprika, garlic powder, salt, and pepper). Heat a large skillet over medium-high heat with a splash of oil. Sear the salmon cubes for 2–3 minutes per side until they are golden brown and crispy on the edges.

3. Glaze the Bites

Whisk together the honey, soy sauce, lemon juice, and minced garlic. Pour the mixture directly into the skillet with the salmon. Toss the bites gently for 1–2 minutes until the sauce thickens into a sticky glaze that coats every piece.

4. Assemble the Plate

Place a generous scoop of mashed potatoes in the center of a plate. Top with the honey garlic salmon bites, ensuring you drizzle any extra glaze from the pan over the potatoes. Arrange the roasted asparagus on the side and garnish with fresh parsley.
